Iwa 5 Junmai Daiginjo Noir - Assemblage 3 (720 ml)
The pursuit of a Sake ready for a dialogue with the world while proudly rooted in Japan.
IWA 5 is the creation of Richard Geoffroy a renowned winemaker who gained fame as the Chef de Cave  at Dom Pérignon.
Richard Geoffroy’s pursuit of beauty propelled him to the highest reaches of his profession. Born in the heart of Champagne country, he became the fifth chef de cave for Dom PĂ©rignon Champagne and charted the course of the legendary wine for 28 years.Â
To Richard Geoffroy, Japan has never been an abstraction. Following an initial spark in 1991, countless trips have stoked his love for the country, its culture and its people.Â
IWA, therefore, could never be a sake engineered from abroad, a sake bereft of center. In order to be true to sake, and be a true international sake, IWA needed strong roots, anchored in Japan, and to be made according to traditional methods in a brewery of its own design.
ASSEMBLAGE 3Â
Intensity is the salient character, giving an edge to a racy and mouthwatering conclusion
THE NOSE
Intense, pure, highly defined. The first notes are bright ones, intriguingly vegetal, more floral than fruity. The sake calls for a moment of respiration to grow more complex through darker lower tones. White pepper - IWA’s aromatic signature - is clearly present.
THE PALATE
One is instantly struck by the impression of superlative balance and coherence. The weightlessness of the sake unfolds with great tonicity. All sensations seamlessly converge, drawn to a racy, tactile, intense, mouthwatering finish.
